Our fried green tomatoes recipe grew out of a happy accident. Last year was our first try at growing tomatoes from seed. Unfortunately, we were late starting the seeds and also getting the plants in the ground. The result at the end of the growing season…the threat of frost and a couple of pounds of unripe tomatoes.
This fried green tomatoes recipe is easy to prepare. It’s the kind where you don’t need to fuss too much with the measurements. This is always impressive when cooking for overnight guests. So here we go…
Instructions:
Cut 1 cup of tomatoes into 1/4″ slices or in half if you are using baby or cherry varieties
Cut a small onion in half, then cut into 1/2 cm slices
Heat and oil a frying pan or skillet
Add the onions first to give them a head start. Add the the tomatoes once the onions begin to look translucent.
Season with salt and black pepper. You can also add your favourite herbs or spices. This year, fresh basil from the garden was our go to herb.

The tomatoes can get a little dry depending on the amount of fat/oil you are using. If I’m feeling healthy I add a tablespoon of water, if not a little extra oil or even butter will work.
They can be served with eggs or tofu scramble or if you’re eating light, just some toast.
Our fried green tomatoes recipe is so simple it’s almost excessive to classify it as one. It was a great way to use up our abundance of tomatoes.
